Boil the cauliflower until it is soft enough that, when you pierce it with a fork, it slides off (roughly 15 mins.)
Drain the cauliflower.*
Return the cauliflower to a medium saucepan over medium-low heat, and add the butter and cream cheese.**
Sprinkle the Keto Chow on top, then use an immersion blender to whip the cauliflower into a creamy mash. Cook over medium low for an additional 5-10 minutes, or until it has thickened to your desired consistency.
Salt and pepper to taste.

*If you run it through a salad spinner, you’ll get even more water out, leading to thicker cauliflower mashed potatoes.
**If you have a potato ricer, press the cauliflower through that and into the saucepan for a SUPER CREAMY end product.
