Caramel Macchiato Low-Carb Protein Pancakes

These low-carb protein pancakes have the sweet taste of a caramel macchiato, but without all the sugar!

Ingredients:

Directions:

  • Preheat a large skillet or griddle.
  • Add ingredients to a medium sized bowl in the order listed.
  • Using a stick blender, blend together until completely mixed.
  • Carefully pour 1/4 cup of batter onto the hot skillet or griddle and flatten slightly with a spatula. They spread so no need to flatten much.
  • Cook for three minutes, then flip and cook for another two on the other side.
  • Remove from the griddle and cover to keep warm while you cook the remaining pancakes. Serve with keto caramel syrup and other toppings if desired.
