Ingredients:
- 5 oz. low fat cottage cheese
- 2 eggs
- 2 Tbsp. milk of your choice almond, Fairlife, etc.
- 1 oz. melted butter
- 1 serving Caramel Macchiato Keto Chow
- 1 Tbsp. erythritol or xylitol
- 1 tsp. baking powder
- 1 tsp. espresso powder
- 1 oz. egg white powder
Directions:
- Preheat a large skillet or griddle.
- Add ingredients to a medium sized bowl in the order listed.
- Using a stick blender, blend together until completely mixed.
- Carefully pour 1/4 cup of batter onto the hot skillet or griddle and flatten slightly with a spatula. They spread so no need to flatten much.
- Cook for three minutes, then flip and cook for another two on the other side.
- Remove from the griddle and cover to keep warm while you cook the remaining pancakes. Serve with keto caramel syrup and other toppings if desired.
