Ingredients:
- 1 large egg(s)
- 1 large egg yolk
- 2 Tbsp. cottage cheese
- 2 Tbsp. sour cream
- 2 Tbsp. heavy cream
- 2 Tbsp. Apple Pie Keto Chow
- 1-2 tsp. allulose
- Pinch apple pie spice or ground cinnamon optional
Directions:
- Whisk the egg and egg yolk together in a bowl or liquid measuring cup.
- Mix in the cottage cheese, sour cream, and heavy cream.
- Add the Keto Chow, allulose, and apple pie spice if using; mix until everything is well combined.
- Lightly oil the bottom of a large, microwave safe mug and pour the batter in.
- Microwave on 60% power for three and a half to four minutes.* Let cool in the microwave with the door closed for three minutes before removing. Be careful when you remove it, as it may still be very hot.
*Please note you may have to vary the power level and cooking time according to your microwave. This recipe was tested in a 1000-watt microwave oven.
