Ingredients:
- 1/4 cup heavy cream
- 1 serving Pina Colada Keto Chow
- 1 1/4 cup water room temperature
- 1 1/2 cups ice crushed
- 2 Tbsp. coconut cream at room temperature*
- 2 tsp. fresh lime juice
- 1/4 tsp. rum extract optional
- 1/4 cup seltzer water optional
- Blender
Directions:
- Mix the heavy cream, Keto Chow, and water; chill overnight.
- When ready to make the cooler, add the crushed ice to a blender, pour in the prepared Keto Chow, add the creamed coconut, lime juice, and rum extract if using.
- Blend until fully combined and frothy.
- Transfer to a large glass and gently add the seltzer water if desired.
*Be sure to get unsweetened creamed coconut or coconut butter, not cream of coconut which is high in sugar.
