Keto Bell Pepper Sandwich

Yields:

6 sandwiches

Ingredients:

  • 1 lb. cottage cheese*
  • 1 Tbsp. lemon juice
  • 6 Tbsp. heavy cream
  • 2 tsp. dried basil
  • 1 serving Creamy Tomato Basil Keto Chow
  • 12 oz. cooked chicken breast chopped
  • 4 oz. cooked bacon chopped
  • 2 medium green onions finely sliced
  • 6 medium bell peppers
  • 12 leaves lettuce
  • 6 slices Swiss cheese

Directions:

  • Place the cottage cheese, lemon juice, heavy cream, and basil in a large bowl and stir together.
  • Add the Keto Chow and mix well until completely combined into the cottage cheese mixture.
  • Add the chicken, bacon and green onions.
  • Cover the bowl with plastic wrap and put in the fridge – preferably overnight – to let the flavors meld.**
  • Slice the top off the bell peppers and then slice in half lengthwise. Remove all the stem, seeds, and septa from each half.
  • Lay the halves for each pepper side by side and lay a small lettuce leaf (or two) in each half.
  • On one lettuce-lined half, lay a slice of Swiss cheese and on the other pile spoonfuls of the chicken and bacon salad.
  • Put half with the cheese onto the half with the chicken bacon salad, securing with a wooden toothpick if necessary.
*You can vary the amounts of protein and fat by changing the fat percentage of cottage cheese that you use and/or swapping out the heavy cream for your favorite keto milk.
**The chicken and bacon salad needs to be very thick so that the sandwich is not overly slippery or messy to eat. If, after your salad has rested in the fridge, you think it is still too thick then add more cream (or keto milk) 1 Tbsp. at a time and mix well. You can make and serve these right away, but the chicken and bacon salad is better if it is left to meld in the fridge, preferably overnight.
