New England Style Clam Chowder

Yields:

4 servings

Ingredients:

  • 1 medium turnip peeled and diced (280 g.)
  • 1 cup water
  • 8 oz. bottled clam juice
  • 2 Tbsp. butter 30 g.
  • 4 Tbsp. cream cheese 60 g.
  • 1 serving Baked Potato Keto Chow
  • 6.5 oz. can of chopped clams drained (185 g.)
  • 1 celery rib chopped
  • 3 slices bacon cooked and crumbled
  • 1/2 tsp. minced garlic 1 clove
  • Salt to taste
  • Pepper to taste
  • 1/4 tsp. xanthan gum optional

Directions:

  • Boil the turnip pieces until soft and a toothpick will easily slide into them, roughly 15 minutes. Drain the turnips and set aside.
  • In a medium sauce pan, combine water, clam juice, butter, and cream cheese over medium heat until butter has completely melted and cream cheese has mostly melted.
  • Add the Keto Chow and blend with an immersion blender.*
*Add the xanthan gum to get a thicker clam chowder.
