Reuben Keto Sandwich

This delicious, corned beef keto sandwich is easy to make and perfect for dinner.

Yields:

1 serving

Ingredients:

  • 2 Tbsp. Special Sauce
  • 1/2 oz. dill pickles drained and chopped
  • 2 rye chaffles
  • 2 slices Swiss cheese
  • 4 oz. corned beef sliced
  • 3 oz. sauerkraut drained

Directions:

  • Mix the Special Sauce and pickles.
  • Spread half the sauce on each of the 2 rye chaffles.
  • Top each chaffle with a slice of Swiss cheese.
  • Fold the corned beef slices and lay on top of the cheese on one chaffle.
  • Pile the drained sauerkraut on top of the corned beef.
  • Place the other chaffle onto the sauerkraut to make a sandwich.
  • Use toothpicks to hold the sandwiches together.
