Thanksgiving Leftover Casserole

Directions:

  • Preheat the oven to 400℉.
  • Chop or crumble leftover stuffing into small pieces and spread in one layer to cover the bottom of a casserole dish.
  • Pour leftover gravy evenly over the stuffing layer. If you do not have any gravy, mix a quick version with one serving of Savory Chicken Soup Keto Chow, 1/4 cup melted butter, 1/4 cup heavy cream, 1/4 cup water, 1/2 cup milk of your choice, and 1/2 tsp. dried thyme.
  • Spread an even layer of cooked, shredded vegetables over the gravy layer.
  • Mix together the chopped turkey and cranberry sauce then spread evenly over the vegetable layer.
  • Spoon cold cauliflower mash over the turkey layer to completely cover it.
  • Sprinkle the top of the mash with grated cheddar cheese.
  • Bake in the oven for 30 minutes, or until the mash is golden brown.
