Ingredients:
- 3 Tbsp. bacon fat
- 1/4 cup finely chopped white onion 1 oz.
- 1 15 oz. can black soy beans drained*
- 1 serving Spicy Taco Soup Keto Chow
- 1/4 cup warm water
- 1 Strainer
- 1 Potato masher
- 1 Whisk
Directions:
- Heat a non-stick fry pan over medium-low heat. Add the bacon fat to the pan.
- When the bacon fat is warm, add the onion.
- Cook the onions in the bacon fat, stirring occasionally, until they are soft and starting to brown.
- Add the drained soybeans to the onions in the pan.
- Mash the beans with the potato masher until the beans are pureed.
- Scrape off any bean skins on the masher, and add them back to the pan, or remove them from the masher and discard them for a smoother texture.
- Continue cooking the beans until they begin to look slightly dry.
- Stir in the Keto Chow in the water.
- Add the Keto Chow to the beans in the pan.
- Cook, stirring regularly until the water has evaporated and the bean puree looks thick and slightly shiny.
*Can also substitute with dried beans, which would need to be covered and soaked for 6-8 hours and cooked at a simmer for 6-8 hours. Drain when squishy.
