Ingredients:
- 1 lb. cream cheese at room temperature
- 1 serving Spicy Taco Soup Keto Chow
- 1 tsp. paprika powder
- 1/2 tsp. garlic powder
- 1 cup grated sharp cheddar cheese 4 oz.
- 1 cup grated Monterey Jack cheese 4 oz.
- 2 green onions white and tender green parts, cleaned and thinly sliced
- 2 Tbsp. minced pickled jalapenos with brine
- 1/2 cup pecans crushed (2 oz.)*
- 1 Electric mixer with paddle attachment
Directions:
- Mix the cream cheese, Keto Chow, paprika, and garlic powder on medium speed in a stand mixer until all the Keto Chow is incorporated.
- Add the cheddar cheese, Monterey Jack cheese, green onions, and pickled jalapenos and mix until fully combined.
- Shape the cheese into a ball.
- Place the crushed pecans on a plate or pie dish and gently roll the ball in the pecans until coated, picking up extra pecan pieces and carefully pressing them into the cheese ball.
- Place in the refrigerator to chill for 30 minutes, then wrap it in plastic wrap to store or serve immediately with crackers or vegetable crudité.
*For added flavor, toast whole pecans by baking them on an ungreased cookie tray at 300℉ for about ten minutes, or until lightly browned and fragrant. Let cool completely before crushing in a food processor or blender. As an alternative to pecans, roll your cheese ball in minced parsley cilantro, or paprika.
