Creamy Garden Soup

Here’s a great way to add some greens to your day. This is a mix and match recipe, so you can use your favorite greens and herbs to make it your own. Get creative and have fun with it. Cook up a different garden soup every time you make it. It’s a great way to use up small amounts of fresh greens, herbs and broth leftover in the fridge. For instance, I used chicken broth, arugula, parsley, dried dill and lemon juice for the soup pictured here, but you could use vegetable broth, baby spinach, fresh cilantro, dried basil and a dash of your favorite hot sauce for a completely different creation.

Ingredients:

  • 14 fluid ounces chicken broth or water
  • 1 cup baby spinach or arugula, tender leafy greens such as
  • 1/4 cup fresh parsley cilantro, basil, or chives, roughly chopped, loosely packed fresh herbs
  • 1 teaspoon dried oregano marjoram, tarragon, or dill, of your favorite optional
  • 2 whole green onion white and green parts cleaned and chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 2 ounces avocado oil neutral tasting oil
  • 2 ounces extra virgin olive oil
  • 1 teaspoon lemon juice , apple cider vinegar, or a dash of hot sauce
  • 1 tablespoon grated parmesan cheese or Romano cheeseoptional

Directions:

  • Bring the broth or water to a simmer in a small sauce pan over medium heat or in a microwave safe container in the microwave
  • Add the greens, herbs, salt and pepper to the hot broth.
  • Add the Keto Chow and blend with an immersion blender until the greens are completely pureed.
  • Add the avocado oil, olive oil and lemon juice or vinegar and blend until emulsified.
  • Stir in the cheese (if using) and enjoy.
Yield: approximately 20 ounces
