Ingredients:
- 1/2 cup unsalted butter softened
- 1/3 cup brown erythritol blend
- 2 large egg(s)
- 1 tsp banana extract or flavoring
- 1 serving Banana Keto Chow
- 1/3 cup fine almond flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 cup unsweetened coconut flakes (chopped smaller like oatmeal)
- 1/2 cup Sugar free chocolate chips (optional)
Directions:
- Preheat oven to 350° and grease cookie sheet
- With the mixer on low speed, cream the butter. Add the sweetener, extract and the eggs one at a time and mix well.
- Add Keto Chow, almond flour, baking powder, cinnamon and mix well.
- Add chopped coconut flakes and mix again.
- Add chocolate chips if desired.
- Scoop an inch apart onto a greased cookie sheet and bake on 350° for 15 minutes.
*Ingredients must be room temperature to make them fluffier. KETO CHOW NOTES: This made 16 cookies with a #40 cookie scoop
