Ingredients:
- 12 oz. bag frozen cauliflower
- 1/4 cup tahini
- 2 cloves garlic
- 1 Tbsp. red wine vinegar
- 1 tsp. salt
- 1 serving Savory Chicken Soup Keto Chow
- 1/4 cup room temperature water
- 1/2 cup extra virgin olive oil
- Paprika or cayenne pepper optional
- food processor or high speed blender
Directions:
- Cook the frozen cauliflower until tender. Drain and cool to room temperature.
- Combine the cauliflower, tahini, garlic cloves, vinegar, and salt in the food processor’s work bowl. Process on high speed until the cauliflower and garlic are blended into a puree.
- Mix the Keto Chow with the water. Add the Keto Chow and blend until it's incorporated.
- With the machine running, add the olive oil in a steady stream, blending until all the oil has been absorbed.
- Spread the hummus onto a large plate or shallow serving dish, drizzle with more olive oil and sprinkle with paprika or cayenne pepper for garnish.*
