Ingredients:
Cake/cupcake batter
- 1/2 cup unsalted butter softened
- 4 egg(s) at room temperature
- 1/4 cup granulated sweetener monk fruit or erythritol
- 1 Tbsp. baking powder
- 1/2 cup fine almond flour
- 1 serving Strawberry Keto Chow
- Red food coloring optional
Cream cheese frosting
- 6 oz. cream cheese softened
- 1/2 cup heavy cream
- 2 Tbsp. Strawberry Keto Chow
- 1/4 cup powdered sweetener Swerve
Directions:
- Preheat oven to 350℉. If making a cake, grease a 10-inch round cake pan and line with parchment, or line a standard cupcake tin* if you prefer to make cupcakes.
- With an electric mixer, mix cake ingredients on medium speed for about 2-4 minutes until creamy and well combined.
- Add batter to the cake pan or cupcake tin.
- If making a cake, bake for 30 minutes. For cupcakes,* bake for 25 minutes. Let cool completely before frosting.
- Mix the frosting ingredients with an electric mixer on low. After 30 seconds, or when there is no loose powder, whip on high for one minute. Scrape sides and then whip another minute.
- Frost cakes as desired.
*If using a mini cupcake tin, bake for 8 min. Will yield approximately 45 mini cupcakes.
