Keto Chicken Meatballs

These keto chicken meatballs are so easy to make, and they go great with zoodles.

Yields:

15 meatballs

Ingredients:

  • 1 1/2 lb. ground chicken 24 oz.
  • 1 large egg
  • 1/2 cup grated parmesan cheese 2 oz.
  • 1 serving Savory Chicken Soup Keto Chow
  • 2 tsp. Italian seasoning blend
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. cayenne pepper

Directions:

  • Heat oven to 350°F. Oil an 18 x 13” baking tray (or line it with parchment paper).
  • Mix the chicken, egg, cheese, Keto Chow, Italian seasoning, garlic powder, sea salt, black pepper, and cayenne pepper together in a large mixing bowl.
  • Scoop the mixture into 15 portions, about 1 tablespoon each. Roll them between your palms to shape them into balls.*
  • Place the shaped meatballs on the tray.
  • Place the tray into the center rack of the oven.
  • Bake until beginning to brown on the bottom where they are touching the tray, about 20 minutes. They should look set and have an internal temperature of 165°F when tested with an instant read thermometer.
*If the mix sticks to your hands, dampen them lightly with cold water.
