Ingredients:
- 3 eggs
- 2 1/2 oz. pork panko
- 2 tsp. dried dill
- 2 tsp. dried mint
- 2 Tbsp. sour cream
- 1 lb. ground chicken or substitute ground turkey
- 1 1/2 cups Creamed Spinach link to recipe here
- 3 oz. mozzarella sliced
- 2 oz. mushrooms sliced (baby bella or button)
Directions:
- Preheat the oven to 375℉.
- In a bowl, add the eggs, pork panko, dried herbs, and sour cream and mix until thoroughly combined.
- Place the ground chicken in a large bowl, pour in the egg mixture and, using a fork, mix together until you have a ball of dough.
- Place a piece of parchment paper on a baking sheet. Spoon the turkey mixture onto it and spread evenly into a 12” circle using a spatula.
- Bake for 20 minutes.
- Spread the spinach evenly over the crust and then add the mozzarella and mushrooms.
- Bake for an additional 10 minutes.
- Allow pizza to cool before slicing.
