Ingredients:
- 6 slices bacon
- 1 1/2 lb. 80/20 ground beef
- 1 1/2 lb. ground pork (can be substituted with additional ground beef)
- 1 medium sweet onion diced
- 2 medium green bell pepper diced
- 2 tsp. garlic minced
- 3 cups organic beef stock
- 2 Tbsp. chili powder
- 4 tsp. ground cumin
- 2 tsp. salt
- 1 tsp. ground black pepper
- 1/2 tsp. cayenne pepper
- 30 drops liquid stevia or monk fruit optional
- 2 servings Creamy Tomato Basil Keto Chow (or 2 scoops)
Directions:
- Heat up a large cast iron pot or Dutch oven on medium heat.
- Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.
- Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.
- When meat is mostly cooked, add the pepper, onion and garlic. Allow to simmer until soft.
- Add all spices, Keto Chow, and beef stock. Stir to combine. Add monk fruit or stevia, if using.
- Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.

My family went crazy over this recipe, the leftovers the next day were amazing. It was not too spicy for the wimpy ones in the family, we did not miss the beans at all and it sure didn’t seem low carb. It’s very filling with a nice bit of sweetness to compliment the spices that make this a 10-star recipe at our house. I ordered a large bag of the tomato basil soup so I can make it on a regular basis
